Zatar-Roasted Cauliflower with Yoghurt-Tahini Sauce

Ingredients
4 tbsp olive oil
1 cauliflower - chopped into florets (stalks can be used - no food waste necessary!)
2 garlic cloves - crushed
2 tsp za’atar
Salt and pepper
½ cup vegan plain yoghurt
2 tsp tahini
1 tsp lemon juice
½ tsp maple syrup (to taste)
5-6 sprigs fresh parsley - chopped

Method
- Mix olive oil, garlic, za’atar in a bowl. Adjust seasoning.
- Put cauliflower pieces in baking tray. Pour olive oil-za’atar mix on top, and gently massage into florets until coated.
- Roast for 30-35 minutes in a 400 degree oven. The cauliflower should be browning slightly and on the edge of crispy.
- Meanwhile mix yoghurt, tahini, lemon juice, and maple syrup. Season to taste.
- When cauliflower cooked, pour yoghurt-tahini sauce on top. Garnish with parsley.
